Chapter 3 Yellow Tea 黄茶篇


Yellow tea has one more extra step compared to green tea, that is the step of yellowing. We’ve learnt that in chapter one, the Classification in Theory and Practice, that we classify different types of tea based on the processings and characteristic quality. Therefore, what really makes yellow tea unique is the step of yellowing. So, in chapter three, we are going to figure out what is real yellow tea.

黄茶比绿茶只是多了一个工艺,那就是闷黄。我们在第一章概论中学到《茶叶分类理论与实践》,我们分类不同的茶类,是基于茶叶工艺和品质特点的。所以,真正造就黄茶独特品质的是闷黄工艺。因此,在第三章中,我们将弄清楚,什么是真正的黄茶。

Chapter 4 White Tea 白茶


White tea might be the first type of tea invented by human beings. Imagine that, the ancient people picked the leaves, dried them naturally in the sunlight, then stored them for drinking later on,that is the start of white tea although it was invented in the Song dynasty according to the official record. White tea has the least processing steps, you may think that it is quite simple, well, you are wrong. So, in chapter four, let’s figure out the charms of white tea.

白茶可能是历史上最早发明的茶类。想想一下这样的画面,古人采下鲜叶,利用太阳光自然晾干而成,再储藏起来以便日后饮用,这就是白茶的起源,虽然根据官方记载其工艺正式起源于宋朝。白茶工艺最简单,你以为加工白茶就很简单,那么,你就错了。因此,第四章白茶篇中,我们就一起来学习白茶的魅力吧。
